Happy Saturday, friends! Welcome to the weekend.
Weekends are wonderful for many reasons. Personally, I abandon any attempt at a diet in favor of all of the cheese, and let my dog snuggle in bed in the morning. It’s glorious. Another weekend perk? Brunch. While my bottomless mimosa days are long behind me, brunch is still very much a thing. When you think about it, many brunch dishes involve “all of the cheese,” so it really fits right into my strict Saturday-Sunday programming.
Given the choice of sweet or savory, I will ALWAYS go savory. It could be 11am and I’ll still order a burger with a fried egg before I even glance at the pancakes. At home, savory brunch dishes often turn into some type of toast. (Because somehow at home, burgers at 11am just aren’t as acceptable.) Frankly, I’m not sure if avocado toast is finally considered basic, but it’s definitely still delicious. This version is a favorite, with a sunny egg, salty feta and hot sauce. Anything but basic, if you ask me. Happy weekend-ing!
Makes 1 piece.
Ingredients
- 1 large slice sourdough bread
- half an avocado
- butter
- 1 egg
- 5-6 cherry tomatoes, halved
- 1 ounce feta, crumbled
- 1 teaspoon chopped cilantro
- hot sauce of your choice (optional)
- salt
- freshly ground black pepper
Method
Remove the avocado from its skin to a small mixing bowl. Season with salt and pepper, and use a fork to roughly mash. Set aside.
In a small, nonstick skillet, preheat a pat of butter over medium heat. When the butter is melted, crack the egg into the pan. Prepare your egg however you like— over-easy, over-medium, etc. For a sunny egg (as pictured) this is my favorite technique!
Pour the egg white into the pan first, using the shell to hold back the yolk. Let it cook for about 30 seconds, and then carefully place the yolk on top. Use the shell to hold it in the center of the white for a moment so that it doesn’t slide to the side, and then continue to cook until the white is set and the yolk is warmed through, about 3 minutes. Remove from the heat immediately, season with salt and pepper and keep in the warm pan until ready to serve.
Meanwhile, toast and butter the bread. Top with smashed avocado, then the egg, tomatoes, feta and cilantro. Garnish with hot sauce if you like. Crystal is my go-to! Serve immediately.
